To explain quickly sawdust is pressed at high pressure into pellets molds and creates heat. A natural product called Lignin seeps from the wood at this temp and acts as a natural binder and forms pellets. The lignin is in all woods. When the pellets cool they are ready to burn.
The differance between Cooking and Heating pellets is, heating pellets are made of soft woods, like pine. They don't burn as clean for cooking and will leave a nasty taste to the food and will harm you if you use them for cooking.
